The chef's guiding principle is to delight the eyes and the taste buds, and to stimulate the senses with seasonal flavours, imaginative cooking and delicious dishes inspired by both local and exotic traditions.
Our 48-seat restaurant serves gourmet dishes created with passion by the Château de Wallerand chef.
A perfect opportunity for us to introduce our chef, Julien Castoldi. A native of the region, he earned his stripes in prestigious kitchens such as the hotel La Villa in Calvi and several luxury hotels in France, including Les Airelles in Courchevel, where he worked alongside Pierre Gagnaire, the Château de la Messardière in St Tropez and the Barrière Les Neiges in Courchevel.
